At BMDL Twelth night we had an awesome cookie contest, our Countess Ariella of Thornbury won the day as the populace’s choice for favorite cookie and we wanted to share the recipe with everyone so they can make them at home!<\/p>\n
Preheat oven to 275 degrees.
\nGrease 2 sheets of parchment and use to line 2 cookie sheets.<\/p>\n
Add 1 cup packed light brown sugar to 1 large egg white, stiffly beaten.<\/p>\n
Stir in 2 cups coarsely chopped pecans and 1 tsp vanilla extract.<\/p>\n
Drop by teaspoonfuls onto lined cookie sheets.<\/p>\n
Bake approx. 30 min until set and golden. Cool on rack.<\/p>\n
